Lamb Grilled on Skewers
These spicy lamb skewers can be grilled in the oven, on the grill or even on the braai (barbeque). In India this dish is often served with a cream and nut sauce.
Ingredients
- 1kg boneless leg of lamb, trimmed of excess fat and cut into 4cm cubes
- 1 tsp. ground cumin
- ½ tsp. turmeric
- 1 ½ tsp. salt
- 3 tbs. plain yoghurt
- 1 finely chopped onion
- 1 ½ tbs. finely chopped fresh coriander
- 1 ½ tbs. finely chopped fresh ginger root
- 1 tsp. finely chopped garlic
- ½ tsp. garam masala
Method
- Rub the lamb with the cumin, turmeric and salt to coat evenly.
- Add the yoghurt, onions, coriander, ginger and garlic and toss together until thoroughly blended. Marinate at room temperature for at least 2 hours.
- Remove the lamb from the marinade and thread onto skewers, pressing the cubes tightly together.
- Grill the skewers on medium-high heat, turning the skewers occasionally for about 10-20 minutes until the meat is brown and is done to your taste.
