Salsa di Pomodori (tomato sauce)
Tomato sauce made in the traditional Italian way! This sauce can be used as a base sauce on pizza and is the perfect accompaniment to pasta dishes.
Ingredients

5 teaspoons maize or corn oil

70g finely chopped onions

680g Italian plum or whole-pack tomatoes, coarsely chopped but not drained

2 ½ tablespoons tomato paste

¾ tablespoon finely cut fresh basil or 1 teaspoon dried basil

1 small teaspoon sugar

2 teaspoons salt

freshly ground pepper
Method

Heat the oil in a saucepan until a light haze forms over it. Add the onions and cook them over a moderate heat for 7 to 8 minutes, or until soft but not browned.

Add the tomatoes, tomato paste, basil, sugar, salt and a few grindings of pepper.

Reduce the heat to very low and simmer, with the pan partially covered, for about 40 minutes. Stir occasionally.

Press the sauce through a fine sieve into a bowl.

Taste for seasoning and serve hot.
