Lemon Meringue

A quick and easy recipe for Lemon Meringue that can be whipped up in minutes and look absolutely beautiful when it comes out of the oven.



  •  1/2 pkt Marie biscuits
  • 1/4 lb butter (melted)


  •  1 tin condensed milk
  • 2 eggs separated
  • 1/4 cup lemon juice
  • 1/4 tsp lemon essence
  • 3 Tblsp sugar


  1. Crush the marie biscuits and mix with the melted butter.
  2. Grease a 9-inch tart dish and press the biscuit mixture into the bottom of the dish.
  3. Beat the condensed milk, lemon juice, lemon essence and the egg yolk together and pour this mixture over the crushed biscuits.
  4. For the meringue, beat the egg whites until stiff and foamy while gradually adding 3 tablespoons of sugar.
  5. Pour the beaten egg white mixture over the filling.
  6. Bake at 150C till golden brown.
  7. Serve chilled.
