Bauernfrühstück

Bauernfrühstück – a traditional German recipe, “Bauernfrühstück” literally translates to Farmer’s Breakfast. This is a substantial breakfast dish of omelette with bacon, onions and potatoes. A satisfying and very tasty start to the day!

Ingredients:

  • 6 slices bacon
  • 1 tablespoon butter
  • 1 onion, chopped
  • 4 potatoes, cooked and finely diced
  • 6 eggs
  • 1/2 teaspoon salt
  • freshly ground black pepper
  • 1/4 cup milk

Instructions:

  1. In a frying pan, fry the bacon until crisp.  Remove and drain on paper towel.
  2. Remove the bacon fat from the frying pan, add the butter and saute the onion until soft.  Add the potatoes and brown lightly. 
  3. Beat the eggs lightly and add the salt, pepper and milk, and finally the chopped bacon. 
  4. Pour the egg mixture over the onions and potatoes and stir occasionally until cooked.

    There are variations on this recipe – try adding some ham and sprinkle chopped chives on top before serving. A very substantial breakfast.
