Griddle Cakes
Griddle cakes are easy to make,and perfect for breakfast when topped with maple syrup or topped with fresh fruit and cream for dessert.
Ingredients
225g plain flour
2 tsp. baking powder
2 tsp. sugar
1 tsp. salt
3 eggs, lightly beaten
500ml milk
60ml melted butter
Method
- Sift the flour, baking powder, sugar and salt together into a large mixing bowl.
- Make a well in the centre of the flour and pour the eggs and milk. With a large spoon, mix together only long enough to blend then stir in the melted butter. Do not overmix.
- Heat a griddle or frying pan over a moderate heat and grease it with a pastry brush dipped in oil, continue to grease when necessary.
- Drop spoonfuls of the mixture into the pan and cook for 2-3 minutes, until small bubbles have formed on the surface. Turn with a spatula and cook for another minute until golden brown.
- As a variation, you may add fresh or cannedĀ fruit to theĀ batter before frying.
