Popovers
A popover is a light, hollow roll made from an egg batter similar to that used in making Yorkshire pudding. The name “popover” comes from the fact that the batter swells or “pops” over the top of the muffin tin while baking.
Ingredients
- 2 eggs
- 250ml milk
- 120g plain flour
- ¼ tsp. salt
- melted butter
Method
- Preheat the oven to 230°C.
- In a large bowl,beat the eggs with a rotary or electric beater for a few seconds until frothy.
- Still beating, pour in the milk, then the flour, salt and 15ml of the melted butter.
- Continue to beat until the mixture is smooth but be careful not to overbeat.
- Grease 8 muffin tins with the remaining melted butter. Pour enough batter into each tin to fill it about 2/3 of the way to the top.
- Bake in the centre of the oven for 20 minutes. Then reduce the heat to 180° C and bake for 10-15 minutes more, or until the popovers have puffed to their fullest height, and are golden brown and crusty.
- Serve immediately. Makes 8.
