Lemon Meringue
A quick and easy recipe for Lemon Meringue that can be whipped up in minutes and look absolutely beautiful when it comes out of the oven.
Ingredients:
Crust
- 1/2 pkt Marie biscuits
- 1/4 lb butter (melted)
Filling
- 1 tin condensed milk
- 2 eggs separated
- 1/4 cup lemon juice
- 1/4 tsp lemon essence
- 3 Tblsp sugar
Method:
- Crush the marie biscuits and mix with the melted butter.
- Grease a 9-inch tart dish and press the biscuit mixture into the bottom of the dish.
- Beat the condensed milk, lemon juice, lemon essence and the egg yolk together and pour this mixture over the crushed biscuits.
- For the meringue, beat the egg whites until stiff and foamy while gradually adding 3 tablespoons of sugar.
- Pour the beaten egg white mixture over the filling.
- Bake at 150C till golden brown.
- Serve chilled.
