Spinach Lasagna

An easy vegetarian Lasagna made with spinach and 4 cheese varieties. This tasty dish is best served with a large salad and will satisfy 8 to 10 people.

Ingredients:

  • 400 oz frozen chopped spinach
  • 1 large container low fat cottage cheese
  • 12 oz tomato and basil feta cheese, crumbled
  • 1.5 tsp dill
  • 1/4 cup water
  • 2 eggs
  • 1 box lasagna noodles, uncooked
  • 4 cup shredded mozzarella, divided
  • 1 cup grated Parmesan

Instructions:

  1. Preheat the oven to 350 degrees. Combine spinach and broccoli and set aside.
  2. In a separate bowl combine cottage cheese, feta cheese, eggs, water, dill and set aside.
  3. In a standard lasagna pan, layer ingredients: 
    cottage cheese sauce on the bottom
    single layer lasagna noodles
    more sauce,
    2 cups mozzarella
    spinach.
  4. Create second layer of noodles, sauce and spinach.
  5. Bake for 50-55 minutes (until noodles are tender when tested with a fork)
  6. Layer the remaining 2 cups of mozzarella and grated Parmesan on top.
  7. Return to the oven for 5-10 minutes just until cheese is melted.
  8. Allow lasagna to sit for 5 minutes before serving.
  9. Check your lasagna after about 40 minutes in the oven. If it seems dry sprinkle 1/4 cup of water over lasagna.

    Method says combine Spinach & Broccoli but there isn’t any broccolii in the ingredients?
