Soetkoekies
Soetkoekies are traditional South African biscuits of Dutch origin, made with flour and wine. (”soet” means “sweet” and “koekies” are “cookies”). Preparation time is about 20 minutes, cooking time is 10 minutes.
Ingredients:
- 410 g cake flour
- 5 ml salt
- 5 ml ground cloves
- 5 ml ground cinnamon
- 5 ml ground ginger
- 5 ml bicarbonate of soda
- 210 g sugar
- 250 g butter
- 100 g ground almonds
- 2 large eggs
- 50 ml port
- 100 g slivered almonds
Method:
- Sift together the flour, salt, spices, bicarbonate of soda and sugar and rub in the butter.
- Add the ground almonds.
- Now mix in the eggs and port. The mixture should form a stiff dough.
- Cover the dough with plastic wrap and allow it to stand for at least two hours, preferably overnight.
- Roll the mixture out onto a floured surface, about 5mm thick.
- Cut the biscuits out using a round biscuit cutter and place on greased baking trays (you could also use shaped biscuit moulds).
- Top each biscuit with a few slivered almonds.
- Bake in a preheated oven for 10 minutes at 200 ºC.
- Allow the biscuits to cool and store in an airtight container.
